Jalapeño chiles are the most commonly used chile in the United States. They are green and tapered and have thick, meaty flesh. They have a nice vegetably flavour that many chiles lack, sort of like a spicy green bell pepper. Jalapeños are very versatile and can be added to almost anything you want to spice up. We like to keep chopped jalapeños on hand. You can briefly soak them in warm water to rehydrate them, which is a great solution for nachos, chili, cornbread or whatever you’re making when you don’t have fresh jalapeños around.
