Amchur is an Indian spice made from green, unripe mangoes. Slices of the mango’s flesh are dried and then ground into a powder. Amchur adds a pleasant acidity to vegetarian cooking in Northern India much the same way as tamarind is used in Southern India, and vinegar or lemon juice are used in other parts of the world. Amchur also appears in pickles, chutneys and curries, adding a fruity and sharply sour flavour to cooking. Try some stirred into plain yoghurt for a quick and unique snack.
